Spanish White Bean & Chorizo Soup

🥣Spanish White Bean & Chorizo Soup! This is a killer #ProteinAndProduce recipe and our first meal prep vid in our new home in Malibu, CA. Adding the poached egg 🍳on top takes it to a whole new level. Everything you need to make your own is outline below!


  • Spanish Chorizo (2-13 links diced)
  • 8 cups of chicken stock
  • 2 large cans of white beans (appx 32oz total)
  • 1 onion
  • 1 bell pepper
  • 1 tsp paprika
  • Pinch of saffron
  • 1 small can of diced tomatoes
  • 8 cloves of garlic
  • Salt and pepper to taste
  • Sherry wine or vinegar to taste
  • small bunch of kale, chopped
  • EVOO


Take 1 cup of broth and steep saffron in it in a small sauce pan over low heat. 

Drizzle pot with EVOO. Brown chorizo for a few minutes and put to the side. Add chopping onion to pan and cook for a couple of minutes, then garlic and do the same. Then add red pepper and paprika and stir all of it and cook for a few more minutes until it is all softened. After that, add the 7 remaining cups of broth, the beans, and the tomato. 

Remove the saffron from the other cup of broth and add to the mixture.

Cook over medium heat for 45 minuted to an hour (you can cook it over low heat for a longer period for max flavor and texture). Add kale and salt and pepper to taste. Cook until kale is softened. Add sherry to taste cook for a few minutes and serve.
